Sweet and Spicy Pickle Recipe

Well, there is a big thumbs up for this double flavour pickle. You can enjoy this with any of your dishes whether it's vegetarian or non-vegetarian as it brings the dual flavour of sweet and spice together. Best thing is that you can carry this to anywhere along with you and its ready to eat immediately.

This simple and easy pickle recipe takes maximum an hour to prepare and to enjoy.

Ingredients Required:-

  • Green Pepper (Grated) - 3 Cups
  • Pickling Cucumber (Grated) - 3 Cups or 6 - 8 pickles
  • Grated or minced Onion - 1 Cup
  • Apple Cider Vinegar - 2 Cups
  • Granulated Sugar - 1 Cup
  • Kosher Salt - 1 Cup
  • Mustard Seeds - 1 Tbsp
  • Celery Seeds - ½ Tsp
  • Red chilli Flakes - 1 Tsp

Instructions to make Sweet & Spicy Pickle:-

1) First, take green pepper, onion and cucumber in a big non-reactive jar or pot.
2) Add Apple cider Vinegar (1 Cup) into the vegetables and cook them on the low flame.
3) Continue to simmer until the vegetables are properly cooked or the liquid reduced to ⅓ of the total quantity. It takes around 30 minutes.
4) Once done, then remove the liquid and drain the vegetables. And, again add the vegetables to the pot.
5) Next, add sugar, remaining vinegar and the spices with the vegetables. Again simmer for around 5 minutes. Once done, then put the flame off and remove the pot from heat.
6) Take the jars and fill the vegetable mixture, clean the rims, apply lids and rings and process for around 10 minutes in a boiling water canner.
7) Once done, then remove the jar from the canner and keep it aside for cool down.
8) When cooling down, then remove the rings and check the seals.
9) The pickle is ready to eat. Store it in an airtight jar and in a cool dark place.
10)  You can enjoy this with any dish of your choice.
